Dave Plank is the Managing Principal of WRSS Food & Nutrition Insights and a Senior Research Fellow at the Department of Food Science and Nutrition at the University of Minnesota. Dave and his team advise clientele on class action defense, regulatory solutions, analytical testing, product development, and intellectual property development. Dave’s publications and patents focus on dietary fiber, trans fat replacement, sweeteners, acrylamide abatement, protein structure, and protein quality. With over 35-years of laboratory research experience and 20-years of food manufacturing experience, Dave can provide unique insights and solutions from regulatory compliance to process control.
